Zucchini tagliatelle


Here are the courgette tagliatelle from our super blogger Clélia, ideal as a starter or as an accompaniment.

It's fresh, it's crunchy, it's tasty, tangy and very very good for your health and for the figure!

Made with limes and mint, it goes perfectly well.

Ingredients for 6 people:

  • 5 beautiful courgettes
  • 1 lime
  • A few sheets of mint fresh
  • Olive oil
  • Salt pepper

Zucchini tagliatelle recipe

Tips: You can of course make the recipe with yellow lemons and fresh herbs: chives, cilantro ... But today the mint has been a revelation. Another tip, for a more sophisticated starter, you can add small strips of smoked salmon to the salad.

1- Peel the skin of your zucchini entirely with a peeler. Wash them and dry them with a clean cloth. Using a peeler, make zucchini tagliatelle by peeling the zucchini lengthwise. Stop when you reach the heart of the zucchini which becomes soft and grainy.

2- Wash and dry the mint leaves. Emboss them above the tagliatelle.

3- Take the zest of the lime and squeeze it to extract the juice. Reserve if you don't serve right away.

4- When ready to serve, add the lemon juice, zest, 3 tablespoons of olive oil, salt and pepper to your tagliatelle. Mix and serve.

Lemon juice, oil, salt and pepper are only added at the last moment to keep the tagliatelle crunchy.
