Cucumber verrine with yogurt


Here is an aperitif or a slimming starter full of freshness with these verrines of sautéed cucumber, yogurt sauce.

Ingredients for 4 persons :

  • 1 big cucumber
  • 2 tbsp. of sunflower oil
  • 1 tbsp. level coffee of turmeric
  • 1 tbsp. level teaspoon curry powder 4 sprigs of chervil
  • 4 tbsp. 1/2 teaspoon blond sesame
  • Fleur de sel, freshly ground pepper

For the sauce:

  • 2 cups of 0% M.F. yogurt
  • 3 tbsp. white balsamic vinegar
  • 2 tbsp. tablespoon of gomasio
  • Fleur de sel, freshly ground pepper

Recipe for slimming verrines with sautéed cucumber, yogurt sauce

Wash and peel the cucumber. Cut it into cubes.

In a pan,

  • Pour in the oil, heat and arrange the diced cucumber.
  • Add the turmeric and curry, mix then season with fleur de sel and pepper.
  • Sauté for a few minutes to obtain a nice color.
  • Remove and let cool completely (about 2 hours).

For the yogurt sauce:

In a large ramekin,

  • Pour in the yogurts, add the vinegar, gomasio, fleur de sel and pepper.
  • Mix then refrigerate until ready to serve.

Wash and remove the leaves from the chervil.

In 4 verrines,

  • Distribute the yogurt sauce then the cucumbers.
  • Dress with the blond sesame and chervil.
  • Serve chilled.
