Salted Strawberry Quinoa Salad


Treat yourself to this delicious savory quinoa salad recipe with strawberries, fennel, radish and cream cheese.

Ingredients for 4 persons :

  • 150 g of a mixture of white quinoa
  • 1 onion red
  • 1/2 fennel and its stems
  • 1/2 bunch of pink radishes
  • 150 g of very fruity Comté
  • 250 g of strawberries
  • 6 tbsp. tablespoon of argan oil
  • 3 tbsp. white balsamic vinegar
  • Salt, freshly ground pepper

Salted Strawberry Quinoa Salad

- Rinse the quinoa with cold water.

- In a saucepan, bring water to the boil, salt and cook the quinoa for 13 minutes. Off the heat, let the grains swell for 2 minutes, then drain them. Let cool.

- Peel the red onion and mince it.

- Wash and mince the fennel and its stems.

- Wash and cut the pink radishes into strips.

- Cut the Comté into cubes.

- Wash, dry and mince the strawberries. Keep the equivalent of 2 tbsp. of vegetables, fruit and cheese to garnish the salad.

- Pour the well-drained quinoa into a salad bowl. Add the chopped onion and fennel, radishes, diced cheese and strawberries. Cover with cling film and let stand in the fridge for about 1 hour.

- Season the quinoa salad with argan oil, white balsamic vinegar, salt and pepper. Adjust the seasoning if necessary.

- Arrange the salad in cups or small plates. Decorate with the rest of the vegetables, fruit and cheese. Serve immediately.

Strawberries bring a tangy and slightly sweet note. To vary the pleasures, it can also be replaced bycurrants, blueberries or some raspberries.
