Warm Lentil Salad with Salmon


Here is a delicious recipe for a lentil salad with salmon accompanied by its yogurt vinaigrette.
Ingredients for 4 persons :

  • 1 onion
  • 1 carrot
  • 15 g semi-salted butter
  • 160 g lentils
  • 1 bouquet garni
  • 4 slices of smoked salmon
  • 4 Cherry tomatoes
  • Salt

For the yogurt vinaigrette:

  • 2 tbsp. tablespoon of balsamic vinegar
  • 1 natural yogurt
  • 4 tbsp. of the lentil cooking juice
  • Salt, freshly ground pepper

Warm lentil salad with salmon, yogurt vinaigrette

> Peel, wash and chop the onion.

> Peel and wash the carrot. Cut it into small cubes.

> In a Dutch oven, melt the butter, place the onion and carrot in it. Sweat for 2 to 3 minutes then add the lentils and the bouquet garni. Pour in water (corresponding to 3 times the volume of the lentils), cook until the lentils are tender (salt halfway through cooking).

> Drain (reserve 4 tablespoons of the lentil cooking juice).

For the yogurt vinaigrette:

> Mix the balsamic vinegar, salt, pepper. Relax with the yogurt and the lentil cooking juice. Mix and check the seasoning.

> Pour the vinaigrette over the lentils, mix.

> Cut the salmon into strips and place them on the lentils.

> Wash and cut the cherry tomatoes into quarters.

Arrange the warm lentil salad on a hot plate, garnish with cherry tomatoes.
