Light and fruity, Raspberry Avocado, Radish and Fennel Salad is a colorful blend of summer fruits and vegetables.
Ingredients for 4 persons :
- 2 sucrines (or lettuce heart)
- 1 shallot
- 50 g cheese
- 100 g of raspberries
- 12 radish
- ½ avocado
- 1 fennel
- 2 tbsp. tablespoon of cider vinegar (or Celtic)
- 5 tbsp. tablespoons of olive oil
- 12 rose petals
- Salt, freshly ground pepper
Raspberry summer salad
> Wash the sucrines and wring them out. Slice them.
> Peel and mince the shallot.
> Crust the cheese and cut it into cubes.
> Wash, dry and reserve the raspberries.
> Wash and hull the radishes. Slice them.
> Peel and dice the avocado.
> Wash the fennel and mince it. Reserve a few green sprigs for dressing.
> Prepare the vinaigrette starting with the salt, pepper and vinegar (the vinegar melts the salt), then add the minced shallot and the oil.
> Gently wipe the petals.
> Present on plates or in a nice salad bowl: place the salad, arrange the sliced fennel and radish, diced avocado and cheese, raspberries and rose petals.
When ready to serve, drizzle with vinaigrette.
