Crunchy salad of corn, shrimps and fresh herbs


Corn wakes up salads on sunny days. Accompanied by delicious prawns or prawns, this recipe is a bowl of freshness.

Ingredients for 4 persons :

  • 1 large box of But ultra crunchy D’aucy (570 g)
  • 1 twenty cooked prawns
  • 1 red onion, finely chopped
  • 2 tbsp. olive oil + 1 for the sauce
  • juice of 1 lemon
  • 1 C. liquid honey
  • 1 C. teaspoon fresh cream
  • 3 sprigs of spring onion or chopped fresh cilantro
  • Salt and pepper.

Drain the corn. Shell the shrimp, remove the heads.

In a pan,

  • Sweat the chopped onion in hot oil.
  • Add the shrimp, season with salt and pepper, and brown for 4 to 5 min. Reserve.

Prepare a sauce by mixing together olive oil, lemon juice, honey and crème fraîche. Emulsify.

Pour the corn into a bowl, mix with the shrimp. Drizzle with the sauce and sprinkle with the chopped herbs.

This recipe can be used with hearts of palm, exotic fruits such as pineapple.
