Eggplant caviar is a delicious recipe and an original way to cook eggplant, both delicate and tasty.

As a starter or as an aperitif, it is a summer dish that is as fresh as it is easy to prepare.

Ingredients for 6 people:

  • 2 large eggplants
  • Olive oil
  • 2 cloves garlic
  • Pink berries
  • Coriander

Eggplant caviar recipe:

The eggplant caviar recipe will be better if it is prepared the day before because the eggplants will have time to soak up the flavors and candy a little longer.

  • Preheat the oven to 150 °
  • Wash the eggplants and cut them in 2 lengthwise.
  • Slightly incise the flesh in both directions to create a checkerboard
  • Place the eggplants on a baking sheet, flesh side up
  • Pour a drizzle of olive oil on the flesh side
  • Bake and cook until the flesh is soft (about 1 hour of cooking)
  • Take out of the oven and collect all the flesh
  • Mix with the crushed garlic and cilantro
  • Season
  • Let cool and keep cool
    Eggplant caviar keeps very well in the refrigerator, lightly covered with olive oil.

You can taste the eggplant caviar on a toasted bread, garnished with pink berries and possibly a few small shallots or chopped red onions.
