Eggplant: benefits and virtues


Eggplant or Solanum melongena,belongs to the Solanaceae family. Its smooth-skinned fruit is the star of Mediterranean dishes.

There are many varieties of eggplant, in different colors and shapes.

The most common is Barbentane, cylindrical in shape and dark purple in color. There are also white, streaked white and purple, black and yellow.

China and India are the two largest eggplant producers in the world.

So eggplant was used only for its medicinal properties, in particular as a poultice against hemorrhoids.

Eggplant and its health benefits

Eggplant is great for chasing pounds. It contributes to the decrease in bad cholesterol and thus limit the development of atheroma plaques and high blood pressure. In addition, it is a vegetable that contains only 18kcal / 100g and which quickly satiates.

Eggplant is a diuretic. Poor in sodium, rich in potassium (240mg / 100g) and water (92%), it purifies the body. Eggplant is recommended for inflammation of the urinary tract.

She is too laxative. Its high fiber content (2.5%) softens digestive ailments, accelerates intestinal transit and fights against constipation.

The eggplant is astringent.

The skin of the eggplant is also a source ofantioxidants. These protect the body from free radicals and thus slow the onset of cardiovascular disease, cancer and premature cell aging.

It also contains beta-carotene beneficial for vision and against aging of the skin.

Eggplant has properties anti-inflammatory, effective in case of mosquito bites. To do this, apply dried eggplant powder to the affected area.

Eggplant stimulates the secretions of the gallbladder and the proper functioning of the liver.

It is the source of iron, to fight against anemia. It also provides potassium in large quantities, magnesium, vitamins in smaller quantities.

It is best to consume it with a minimum of fatbecause its flesh absorbs fat.

With the glycemic index being 20, eggplant is found to be interesting in diabetic diets but also in high blood pressure.

Eggplant-based recipes

Eggplant toasts : Sauté thin eggplant slices in a pan with a drizzle of olive oil. Reduce them.

On slices of wholemeal bread, place a few slices of eggplant, a slice of tomato and mozzarella. Add herbs from Provence. Put in the oven to melt the cheese and eat hot with a green salad.
