Here is a starter full of freshness and flavors thanks to persimon kaki with vegetable vinaigrette in fine brunoise.
Ingredients for 6 people:
- 2 persimon khakis
- 1 pepper green and a peeled red pepper
- 1 spring onion with its stem
- 1 turnip
- 6 black olives
- 3 peas greedy
- 1 onion red
- 1 carrot peeled
- Salt pepper
- 50 grams of fried breadcrumbs
- A few drops of sherry vinegar reduction
Recipe for persimon kaki and its vegetable vinaigrette in fine brunoise
Cut the persimon kakis into fairly large quarters.
Cut all the vegetables, olives and chives into fine brunoise.
Put in a salad bowl and add the fried breadcrumbs, salt and pepper.
Complete with two tablespoons of Spanish olive oil and a few drops of the sherry vinegar reduction.
Mix this vinaigrette well.
Put the persimmon quarters in the salad bowl to coat them completely and arrange on a plate.
