Cream of Tarbais beans with hazelnut oil


A good, soft and creamy velvety, that's what makes you want when you feel the first frost!

Ingredients for 4 persons :

  • 300 g of beans tarbais
  • 30 cl of liquid cream
  • 20 cl of milk
  • 1 knob of butter
  • 1 sweet Cévennes onion
  • 1 white leek
  • 1 liter of chicken stock
  • 1 knob of butter
  • 2 tbsp. of hazelnut oil

Tarbais bean cream recipe with hazelnut oil

Soak the beans in cold water for 12 hours.

  • Peel and slice the onion
  • Melt it over low heat in the butter.
  • Add the leek white washed and cut into slices.
  • Cook for 1 min while stirring.
  • Discard the soaking water for the beans, place them in the pot and cover with the broth.
  • Bring to the boil, lower the heat and cook for 45 minutes at a low simmer.
  • Drain the beans, keeping the broth.
  • Mix them with the milk and a little broth.
  • Pour in the cream and hazelnut oil, mix again.
  • Season and serve with Parmesan.
