Olive salad with zucchini tagliatelle


Full of freshness and flavor, this recipe for olive salad with zucchini tagliatelle is a true delight.

Preparation time: 10 min - no cooking

Ingredients for 6 people

  • 400 g of black olives (1 can)
  • 1 courgette
  • 150 g ungrated Parmesan
  • 1 bunch of coriander
  • 1 lemon
  • Olive oil, salt, freshly ground pepper
  • Wine vinegar

Olive salad with zucchini tagliatelle

> Chop the coriander in a suitable container.

> Add the lemon juice, taking care to remove the seeds, the drained olives, the olive oil and a few drops of wine vinegar.

> Leave to infuse for a few minutes.

> Meanwhile, cut the raw zucchini using a mandolin to keep its crunchiness.

> Arrange the zucchini tagliatelle obtained in a salad bowl, adding the mixture of infused olives, salt and pepper.

> Add shavings of Parmesan cheese made with a grater or a peeler.
