- 15 cl of heavy cream

Maroilles tart recipe
If the traditional recipe is made with a leavened dough (bread dough type), puff pastry can be used for more convenience.
This Maroilles tart recipe should only take you 10 minutes to prepare while the cooking lasts about 30 minutes.
- Spread the puff pastry in a pie dish
- Arrange the cheese at the bottom after cutting it into a 1/2 cm thick piece
- Pepper over the cheese
In a deep dish:
- Break the 3 eggs and beat vigorously
- Add the crème fraîche then continue to beat
- Finally add the milk and beat one last time
- Salt and pour the pie shell over the cheese
Bake in an oven preheated to 200 °
- The cooking time should last at least 25 to 30 minutes
- At the last moment, switch to grill mode to brown the top if this is not the case
- Serve hot

Maroilles is a pretty little village in the North, located in Avesnois, a stone's throw from the department of Aisne.
Maroilles comes from an older cheese, made in the 7th century by the monks of the abbey of Maroilles, then called craquegnon.
It was in the 10th century that the Bishop of Cambrai suggested to the monks to lengthen the ripening of this cheese which would then become Maroilles.
Maroilles is made from renneted milk, salted just after removal from the mold and then stored in the steam rooms where it becomes covered with a light blue mold. It is then brushed to remove this layer of mold and then placed in the cellar for refining.
The Maroilles tart is one of the most emblematic and authentic recipes of this cheese.
